Cauliflower Crust Pizza!

We are always trying to cut down on processed food around here. 

 

Although I could nosh veggies (and only veggies) all day long, eliminating processed foods can be hard for a couple who loves simple things like saltine crackers and frozen pizza!

This is a fantastic recipe I found years ago and have been making it ever since!

Soooo good! Dont knock it till you've tried it friends ;) 

Cauliflower Crust Pizza!

The crust is crazy good!

I could eat it plain with marinara sauce just as is! Give it a try!! 

First: Rice or pulse uncooked cauliflower in your food processor. I usually just use my cheese grater when I am in a hurry. It is a bit messy, but works just as well!

Then steam grated cauliflower on stove top or in  microwave on high for 5 minutes so cauliflower is tender. Remove from steamer or microwave

Then stir in 1 egg, cheese (I use 1/2 fat free shredded cheese and 1/2 part skim), salt and pepper to taste and Italian seasoning! 

Once combined, press onto a sprayed pizza pan with a fork or back of a spoon!

Next, season to taste with extra Italian Seasoning and pop in the oven for 15 minutes!

The cheese and the egg work as a binding agent and make this "crust" absolutely delightful! 

Oh, looking at these pictures makes me want to dig in right now!

Recipe: 

1 Head cooked cauliflower

1 egg or 1/4 cup egg beaters

1/2 cup fat free grated mozzarella cheese

1/2 cup part-skim grated mozzarella cheese

1/2 cup parmesan cheese

Italian seasoning, salt and pepper to taste

Toppings: 

Marinara sauce, cheese, veggies, meat...whatever your heart desires! 

Preheat oven to 450. 

Rice uncooked cauliflower and put it in the microwave on high for 5 minutes to steam it. 

As directed above, mix together cooked cauliflower, egg, 1/2 cup fat free mozzarella, 1/2 cup parmesan, and seasonings. flatten to desired shape on sprayed pizza or cookie sheet.

Bake 15 minutes.

Pull out of oven, add remaining (1/2 cup mozzarella) cheese, sauce and toppings and heat for a few minutes under the broiler until cheese has melted.
