I am by no means a "food blogger," but I absolutely love sharing my favorite recipes so those around me can enjoy them too!
Summer may be fleeting, but this salad is good all year round ;) Although Im not typically crazy about dill, this herb makes this dish so refreshing and delicious...good at any summer bbq or even for something lighter at a Christmas party.
First, combine lemon juice, dill and mustard with olive oil in a small bowl and wisk together until well blended.
Chop tomatoes, and cucumber and pour in large bowl with drained and rinsed garbanzo beans.
Add dressing, and a splash of white wine vinegar (not too much, but this gives the salad an extra kick.)
Stir together and let marinade for at least a half hour.
Before ready to serve, add crumbled feta over the top to taste and salt/pepper!
Two Cans of Garbanzo beans
2 1/2 cups of cucumber
2 large roma tomatoes, chopped and seeds removed
Equal parts lemon juice and olive oil (1/4 cup each)
A small splash of white wine vinegar
1.5 teaspoons honey dijon mustard
1/4 cup dill
Crumbled Feta cheese and salt and pepper to taste
